1 lb ground beef
1 small yellow onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (10 oz) Rotel tomatoes with green chilies
2 cups beef broth
2 cups dry pasta (elbows or shells)
4 oz cream cheese, cubed
1 ½ cups shredded sharp cheddar, divided
1 cup crushed tortilla chips
½ cup sour cream (for topping)
Salt and pepper to taste
Optional: sliced green onions, hot sauce
In a large skillet, cook ground beef over medium-high heat until browned.
Add onion and garlic; sauté until softened.
Mix in taco seasoning and stir for 1 minute.
Add Rotel and broth, stirring to combine.
Stir in dry pasta. Cover and simmer for 10–12 minutes.
Reduce heat; add cream cheese and stir until smooth.
Stir in ¾ cup cheddar cheese.
Sprinkle remaining cheese over top; cover to melt or broil briefly.
Add tortilla chips just before serving.
Serve with sour cream and optional toppings.
