This cheesy, savory skillet dish features crispy potatoes, smoky sausage, and ranch seasoning all topped with melty cheddar. A quick and hearty one-pan meal.
1.5 lbs potatoes (gold or russet), diced
14 oz smoked sausage, sliced into rounds
1 packet dry ranch seasoning (1 oz)
1½ cups shredded sharp cheddar cheese
2 tbsp olive oil or butter
Salt and pepper, to taste
Green onions or parsley, for garnish
Microwave or boil diced potatoes for 5–7 minutes until just tender. Drain.
Heat oil in a large skillet. Cook sausage slices until browned, then set aside.
Add more oil if needed. Sauté potatoes with half the ranch seasoning until crispy, about 10–12 minutes.
Return sausage to the pan. Add remaining ranch mix and stir to combine.
Top with shredded cheese. Cover and cook 2–3 minutes until melted.
Garnish with green onions or parsley and serve hot.
