Cheesy Taco Pasta is a one-pan meal that blends taco-seasoned beef, tender pasta, and melted cheese into a creamy, comforting dinner ready in 30 minutes.

Ingredients

1 lb ground beef
2 cups uncooked pasta (shells, rotini, or penne)
1 packet taco seasoning (or 2.5 tbsp homemade mix)
1 small onion, chopped
2 cloves garlic, minced
1 (15 oz) can tomato sauce
2 cups beef broth
1 cup shredded cheddar cheese
4 oz cream cheese, cubed
Salt and pepper to taste
Optional: corn, black beans, green chiles

Instructions

  • In a large skillet, cook ground beef over medium heat until browned. Drain fat.

  • Add onion and cook for 3–4 minutes. Stir in garlic and cook for 30 seconds.

  • Sprinkle taco seasoning over the meat and stir well.

  • Add tomato sauce and broth; bring to a gentle simmer.

  • Stir in uncooked pasta. Cover and cook for 10–12 minutes, stirring occasionally.

  • Check pasta for doneness. Add more broth if needed.

  • Lower heat and stir in cheddar and cream cheese until melted and smooth.

  • Remove from heat and let rest for a few minutes. Serve with toppings.
