2 cups shredded cooked chicken
8 large eggs
1/3 cup whole milk
1/2 cup salsa
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 can (4 oz) diced green chiles
2 ripe avocados, diced
6 medium flour tortillas, quartered
1 1/2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
Cooking spray or oil
Preheat oven to 375°F and grease a 9×13-inch baking dish.
In a bowl, whisk eggs, milk, salsa, garlic powder, salt, and pepper.
Layer 1/3 of the tortillas in the dish.
Add half the chicken, avocado, chiles, and cheese.
Repeat with another layer of tortillas and the remaining fillings.
Top with the last of the tortillas.
Pour the egg mixture evenly over the dish and press down gently.
Sprinkle remaining cheese on top.
Bake uncovered for 35–40 minutes, or until golden and set.
Let cool 10 minutes before serving.
