A savory breakfast bake made with everything bagels, chicken sausage, eggs, cheese, and veggies. Perfect for brunch or weekly meal prep.
4 everything bagels, cubed
12 oz cooked chicken sausage, sliced
8 large eggs
1 cup whole milk
1/4 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup diced red bell pepper
1/2 cup chopped onion
1 tbsp butter or non-stick spray
Salt and black pepper to taste
Preheat oven to 375°F. Grease a 9×13-inch baking dish.
Brown sausage slices in a skillet, about 5–6 minutes.
Cube and toast bagels if fresh.
Sauté peppers and onions until soft.
In a bowl, whisk eggs, milk, cream, salt, and pepper. Mix in half the cheese.
Layer bagels, sausage, and veggies in the baking dish.
Pour egg mixture over everything. Press down gently.
Sprinkle the remaining cheese on top.
Let rest for 20–30 minutes or refrigerate overnight.
Bake uncovered for 40–45 minutes, until golden and set.
Cool for 10 minutes before slicing.
