A savory breakfast bake made with everything bagels, chicken sausage, eggs, cheese, and veggies. Perfect for brunch or weekly meal prep.

4 everything bagels, cubed
12 oz cooked chicken sausage, sliced
8 large eggs
1 cup whole milk
1/4 cup heavy cream
1 1/2 cups shredded cheddar cheese
1/2 cup diced red bell pepper
1/2 cup chopped onion
1 tbsp butter or non-stick spray
Salt and black pepper to taste

Instructions

  • Preheat oven to 375°F. Grease a 9×13-inch baking dish.

  • Brown sausage slices in a skillet, about 5–6 minutes.

  • Cube and toast bagels if fresh.

  • Sauté peppers and onions until soft.

  • In a bowl, whisk eggs, milk, cream, salt, and pepper. Mix in half the cheese.

  • Layer bagels, sausage, and veggies in the baking dish.

  • Pour egg mixture over everything. Press down gently.

  • Sprinkle the remaining cheese on top.

  • Let rest for 20–30 minutes or refrigerate overnight.

  • Bake uncovered for 40–45 minutes, until golden and set.

  • Cool for 10 minutes before slicing.
