This breakfast pizza features a crisp hash brown crust layered with scrambled eggs, chicken sausage, sautéed vegetables, and melty cheese. A hearty, all-in-one dish that’s perfect for mornings or meal prep.
3 cups frozen shredded hash browns, thawed and drained
1 tbsp olive oil or butter
1/2 tsp salt
1/4 tsp pepper
4 fully cooked chicken sausage links, sliced
1/2 cup diced bell pepper
1/4 cup diced onion
6 eggs
1/4 cup milk or milk alternative
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
Optional: chopped herbs, hot sauce
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Press hash browns into a 10–12 inch round. Drizzle with oil, season, and bake for 20–25 minutes.
Brown sausage slices in a skillet. Set aside.
Sauté bell pepper and onion until soft.
Beat eggs with milk, salt, and pepper. Scramble gently until just set.
Top crust with scrambled eggs, sausage, and veggies. Sprinkle cheese on top.
Bake 8–10 more minutes until cheese is melted.
Cool slightly before slicing. Serve warm with optional toppings.
