Tender steak cubes, pan-seared until golden and tossed in a rich, zesty cowboy butter made with garlic, lemon, Dijon, and fresh herbs. Ready in 25 minutes.

Ingredients

Scale

1.5 lbs sirloin steak, cubed
Salt and pepper, to taste
1 tbsp olive oil
4 tbsp unsalted butter
3 garlic cloves, finely minced
1 tbsp Dijon mustard
1 tbsp lemon juice
1/4 tsp red pepper flakes
2 tbsp chopped parsley
1 tbsp chopped chives

Instructions

  • Pat steak dry, season with salt and pepper.

  • Heat oil in a large skillet over high heat.

  • Sear steak in two batches, 1½–2 minutes per side. Set aside.

  • Lower heat, melt butter in the same pan.

  • Add garlic, sauté for 30 seconds.

  • Stir in mustard, lemon juice, red pepper flakes, salt, and pepper.

  • Return steak to pan, toss to coat.

  • Stir in herbs and serve immediately.
