1 lb ground beef
1 tbsp olive oil
1 small onion, diced
3 garlic cloves, minced
1 tbsp tomato paste
1 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1 (14.5 oz) can crushed tomatoes
4 cups beef broth
1 (15 oz) can kidney beans, drained
1½ cups uncooked elbow macaroni
2 cups sharp cheddar cheese, shredded
Salt and pepper to taste
Optional: jalapeños or hot sauce
Heat oil in a large pot. Brown ground beef, then drain excess fat.
Add onion and garlic; cook until softened.
Stir in tomato paste and spices; cook for 1–2 minutes.
Pour in tomatoes, broth, and beans; bring to a simmer.
Add macaroni and cook 10–12 minutes, stirring often.
Reduce heat and stir in cheddar until melted.
Season with salt, pepper, and optional heat.
