2 boneless, skinless chicken breasts
1 tbsp olive oil or butter
Salt and pepper to taste
1/2 tsp garlic powder
2 garlic cloves, minced
1/2 cup low-sodium chicken broth
1 lemon, zested and juiced
1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
1/4 cup heavy cream
Fresh parsley or basil, chopped, for garnish
Season chicken with salt, pepper, and garlic powder.
Heat oil in a skillet over medium-high. Sear chicken 5–6 minutes per side. Remove and cover.
Lower heat. Add garlic and sauté for 30 seconds.
Add broth, lemon juice, and zest. Simmer 2–3 minutes.
Stir in Boursin until melted. Add cream and simmer until thickened.
Return chicken to skillet. Cook 2–3 minutes more.
Garnish with herbs and serve warm.
