- 1 whole chicken (about 3–4 lbs)
- 8 cups water
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
- 1 tsp dried thyme
- Place chicken in a large pot and add water.
- Bring to a boil, then reduce heat and simmer for 45 minutes.
- Remove chicken, let cool, then shred the meat.
- Skim fat from the broth and return shredded chicken.
- Add onion, carrots, celery, garlic, salt, pepper, bay leaves, and thyme.
- Simmer for 20 minutes until vegetables are tender.
- Remove bay leaves before serving.
