A simple and comforting chicken soup made with fresh ingredients.

Ingredients

  • 1 whole chicken (about 34 lbs)
  • 8 cups water
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1 tsp dried thyme

Instructions

  1. Place chicken in a large pot and add water.
  2. Bring to a boil, then reduce heat and simmer for 45 minutes.
  3. Remove chicken, let cool, then shred the meat.
  4. Skim fat from the broth and return shredded chicken.
  5. Add onion, carrots, celery, garlic, salt, pepper, bay leaves, and thyme.
  6. Simmer for 20 minutes until vegetables are tender.
  7. Remove bay leaves before serving.

Notes

  • Use leftover chicken or rotisserie chicken to save time.
  • Store in the fridge for up to 3 days.
