Ingredients

1 lb boneless, skinless chicken breasts or thighs
1 tablespoon olive oil or butter
1 onion, chopped
2 carrots, peeled and sliced
2 celery stalks, chopped
3 cloves garlic, minced
1 tablespoon grated fresh ginger
8 cups chicken broth
1½ cups wide egg noodles
1 tablespoon fresh lemon juice
2 teaspoons fresh thyme (or ½ tsp dried)
2 tablespoons fresh parsley, chopped
Salt and pepper to taste

Instructions

    • Heat oil in a large pot. Sauté onion, carrots, and celery until soft (6–7 min).

    • Add garlic and ginger. Cook 1–2 minutes.

    • Add chicken, broth, thyme, and salt. Bring to a boil.

    • Reduce heat and simmer 20–25 min. Remove chicken, shred, and return to pot.

    • Stir in noodles and cook 8–10 minutes until tender.

    • Add lemon juice and parsley. Season to taste.

    • Serve hot with optional garnish.
