1 lb ground chicken or cooked shredded chicken
6 large eggs
1/2 cup shredded cheddar or Monterey Jack cheese
1/2 red bell pepper, diced
1/2 yellow bell pepper, diced
1/2 medium onion, diced
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp ground cumin
Salt and pepper to taste
6 large flour or whole wheat tortillas
1 tbsp olive oil
Optional: avocado, salsa, black beans
Heat olive oil in a skillet. Cook chicken with seasonings until fully cooked. Remove from pan.
In the same skillet, sauté onions and bell peppers until soft.
Scramble eggs in a separate pan until just set.
Warm tortillas until flexible.
Layer eggs, chicken, vegetables, and cheese onto each tortilla.
Roll tightly and toast in a skillet until lightly crisp.
Serve warm or wrap for storage.
