This Honey Garlic Chicken Fajita Rice Bake blends sweet and savory chicken, sautéed peppers, and seasoned rice with a melted cheese topping. An easy, satisfying dinner for any night.
1/4 cup honey
3 cloves garlic, minced
2 tbsp soy sauce
Juice of 1 lime
1 tbsp olive oil
1 red onion, sliced
3 bell peppers (any colors), sliced
3 cups cooked long-grain rice
1 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
Salt and pepper, to taste
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup shredded mozzarella cheese
Fresh parsley or cilantro for garnish (optional)
In a bowl, whisk honey, garlic, soy sauce, and lime juice. Add chicken, toss to coat, and marinate for 15–30 minutes.
Heat olive oil in a large skillet. Sauté onion and peppers until tender. Remove and set aside.
In the same skillet, cook chicken and marinade until the chicken is fully cooked and sauce thickens.
In a large bowl, mix rice, chicken, vegetables, and spices until well combined.
Transfer mixture to a greased 9×13-inch baking dish. Top with all cheeses.
Cover with foil and bake at 375°F for 20 minutes.
Remove foil and broil for 3–5 minutes until cheese is melted and golden.
Let sit for 5 minutes before serving. Garnish with herbs if desired.
