This tater tot casserole is the ultimate comfort food—layers of seasoned ground beef, creamy sauce, vegetables, melted cheese, and crispy tater tots baked to perfection.
1 lb ground beef
1 small yellow onion, chopped
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
2 cups frozen mixed vegetables
1½ cups shredded cheddar cheese
1 (28–32 oz) bag frozen tater tots
Salt and pepper to taste
Nonstick cooking spray
Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Brown ground beef in a skillet over medium heat. Drain excess fat.
Add onion and garlic. Cook 3–4 minutes until soft.
Stir in soup and frozen vegetables. Cook 3–5 minutes.
Season to taste with salt and pepper.
Spread mixture in the baking dish. Top with shredded cheese.
Arrange frozen tater tots evenly over the top.
Bake uncovered for 40–45 minutes until golden and bubbly.
