A rich and creamy one-pan pasta with seared chicken, sun-dried tomatoes, garlic, and parmesan cheese. A comforting and flavorful dinner ready in under 40 minutes.
2 boneless skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups chicken broth
1 cup heavy cream
2 cups short pasta (penne, rotini, etc.)
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
3/4 cup freshly grated parmesan cheese
Salt and pepper, to taste
Slice chicken into thin cutlets. Season with salt, pepper, and Italian seasoning.
Heat oil and butter in skillet over medium-high. Sear chicken 4–5 minutes per side. Remove.
Lower heat. Add garlic and sun-dried tomatoes. Cook for 1–2 minutes.
Pour in broth and cream. Stir and bring to a simmer.
Add uncooked pasta. Cover and cook 10–12 minutes, stirring occasionally.
Slice chicken and return to skillet. Simmer a few minutes more.
Stir in parmesan. Adjust seasoning. Serve hot.
