1½ lbs boneless, skinless chicken breasts or thighs
2 tbsp olive oil
3 garlic cloves, minced
⅓ cup balsamic vinegar
1½ tbsp honey or brown sugar
1 cup cherry tomatoes
Salt and pepper, to taste
Fresh basil or thyme (optional), chopped
Season chicken with salt and pepper. Heat oil in a skillet over medium-high. Sear chicken 4–6 minutes per side until browned. Remove from pan.
Lower heat to medium. Add garlic and sauté briefly. Stir in vinegar and honey, scraping the pan. Simmer 3–4 minutes.
Return chicken to pan. Add cherry tomatoes. Cook uncovered 6–8 minutes until chicken is fully cooked and tomatoes soften.
Sprinkle with herbs. Spoon glaze over chicken and serve warm.
