1½ lbs boneless chicken thighs or breasts, cut into 2-inch chunks
1 cup dill pickle brine
1 cup buttermilk
1½ cups all-purpose flour
½ cup cornstarch
1 tsp garlic powder
1 tsp paprika
½ tsp cayenne pepper
1 tsp salt
½ tsp black pepper
Vegetable oil for frying
12 slider buns
Toppings of choice (pickles, slaw, sauces)
Combine pickle juice and buttermilk in a bowl. Add chicken and marinate for 4–24 hours.
In a separate dish, whisk together flour, cornstarch, and spices.
Remove chicken from marinade, dredge in flour mixture, and let rest for 10–15 minutes.
Heat oil in a pan to 350°F.
Fry chicken in batches, 3–4 minutes per side, until crisp and golden.
