Quick and Easy Chicken Noodle Soup is a light comforting soup made with tender chicken egg noodles and vegetables simmered in a savory broth.
2 tablespoons olive oil
1 small onion diced
2 carrots sliced
2 celery stalks sliced
2 cloves garlic minced
8 cups chicken broth
2 cups cooked shredded chicken
2 cups egg noodles
1/2 teaspoon dried thyme
1 bay leaf
Salt to taste
Black pepper to taste
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
Heat olive oil in a large pot over medium heat.
Add onion carrots and celery and cook until softened.
Stir in garlic and cook 30 seconds.
Pour in chicken broth and add thyme and bay leaf.
Bring to a gentle boil then simmer 10 minutes.
Add egg noodles and cook until tender.
Stir in shredded chicken and heat through.
Remove bay leaf and add lemon juice.
Season with salt and pepper and stir in parsley.
