A fast and easy chicken stir fry with fresh vegetables and a savory sauce. A go-to dinner recipe for busy nights that’s full of flavor and totally customizable.

Ingredients

1 lb chicken breast, sliced thin
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 medium carrot, thinly sliced
2 cloves garlic, minced
1 tsp grated ginger
2 tbsp soy sauce
1 tsp sesame oil
1 tbsp honey or brown sugar
1 tbsp rice vinegar or lime juice
1 tsp cornstarch (optional)
2 tbsp water (for slurry)
2 tbsp neutral oil (canola or avocado)
Salt and pepper to taste
Optional: sliced green onions, sesame seeds

Instructions

  • Slice chicken and vegetables.

  • Mix soy sauce, sesame oil, sweetener, vinegar, and cornstarch slurry if using.

  • Heat oil in a skillet or wok over medium-high heat.

  • Cook chicken until done, then remove from pan.

  • Add more oil and stir fry vegetables until crisp-tender.

  • Add garlic and ginger, cook briefly.

  • Return chicken and add sauce. Stir to coat and heat through.

  • Garnish and serve.
