An easy slow cooker dish with tender chicken and creamy potatoes in a garlic-Parmesan butter sauce. Comfort food at its best—perfect for busy nights.
2.5 lbs chicken thighs or breasts
1.5 lbs baby potatoes, halved
6 cloves garlic, minced
1/2 cup unsalted butter
3/4 cup freshly grated Parmesan cheese
1 cup low-sodium chicken broth
1.5 tsp Italian seasoning
Salt and pepper, to taste
Chopped fresh parsley (optional)
Pat chicken dry and season with salt, pepper, and ½ tsp Italian seasoning.
Optional: Sear chicken in a hot skillet until golden.
Add potatoes to the slow cooker and place chicken on top.
Melt butter, add garlic, and cook for 1–2 minutes.
Stir in Parmesan and remaining Italian seasoning.
Pour garlic-Parmesan butter over chicken and potatoes.
Add broth around the sides of the crockpot.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Serve with sauce from the slow cooker and garnish with parsley.
