Smashburger Quesadillas bring together the bold flavors of a classic burger with the crispy, cheesy comfort of a quesadilla — perfect for quick dinners, parties, or anytime you’re craving something satisfying.
1 lb ground beef (80/20 blend)
Salt and black pepper
8 small flour tortillas
1½ cups shredded cheese (cheddar, American, or blend)
½ cup sliced pickles (optional)
¼ cup sliced red onion
Shredded lettuce and diced tomato (optional)
Sauce of choice (burger sauce, spicy mayo, thousand island)
Heat a skillet over medium-high.
Roll beef into small balls and place in the pan. Smash flat, season, and cook 2–3 minutes per side. Set aside.
On each tortilla, layer cheese, a beef patty, toppings, sauce, and more cheese. Fold tortilla over.
Toast folded quesadillas in the skillet until golden and crisp, about 2–3 minutes per side.
Let rest briefly, then slice and serve with extra sauce.
